It’s always a headache trying to decide what to have for breakfast, as the convenient options such as buying breads and buns the day before aren’t always the healthiest choice. And most of us don’t have the luxury of waking up and leisurely preparing a meal in the morning, right? And since I’ve seen Cassey (of Blogilates fame) prepare banana pancakes using her super simple recipe, I thought I’ll try it at home myself, using healthy extra virgin olive oil. You can use coconut oil if you have it too.
It’s a ridiculously easy recipe to follow. For every banana, use 2 eggs. So I mashed up 2 bananas and beat 4 eggs, then mixed them together.
Used Mantova spray to coat the pot and ladled the banana/egg mixture in. It takes only about 20 seconds to cook on each side.
It was my first attempt, and the ginormous crepe / omelette (it really was supposed to be a pancake, albeit an over-sized one) was born…
It’s slightly charred but still delicious! I’ll certainly try making these ‘pancakes’ again. With the Mantova spray, it’s really easy to coat the whole surface of the pot / pan using a minimal amount of oil. If you’re making multiple pancakes, just remove the first one, spray 2 to 3 times, and you’re ready to cook a second pancake.
